Guacamole announced today that its new location in NuLu (900 E. Market St.) will have a grand opening on Feb. 22.
Guacamole, the sister restaurant of both Taco Luchador and La Bodeguita de Mima, used to have a location in Lyndon before it moved. It's opening in a newly renovated building that was previously the home of Rye on Market.
“This feels like a totally new experience compared with the old east end location, and an entirely new vibe for Louisville,” said Olé Hospitality Group co-owner, Rick Moir in a statement. “We now have 3 floors and 10,000 square feet full of vibrant, hand-selected fantastical wood carvings from Oaxaca known as ‘alebrijes.’ This feels like a real escape, and I would put the tequila bar up against any rooftop experience in this city. The mural backdrop, the lights, and the views are first-rate.”
Chef Fernando Martinez says he's taking the Guacamole menu in a new direction, having drawn inspiration from a visit to the town of Arrazola in southern Mexico.
“There is more sophistication because it’s a bit more traditional," he said. "There are still a lot of unique inputs, but it is a back-to-roots approach, and the result is a more elevated experience.”
Signature menu items include a modern take on the keto-friendly “Tah-Ketos,” Cochinita a La Leña and Lamb Shank Coloradito.
The Guacamole bar will feature 50 tequila selections and 25 Mezcals.

The new restaurant will be open Tuesday through Saturday from 5 p.m.-10 p.m. You can make reservations through OpenTable.
