Located in a small corner of downtown Lyndon, Holsopple Brewing may be off the beaten path for Highland hipsters. And that may be a good thing! Holsopple offers a regular tap including Paulas Pilsner and Holsopple IPA, both cornerstones of its brand, that are hop forward and adjunct free, high-quality, no-nonsense beers. That said, it does experiment with barrel-aged brews to fantastic results. It recently expanded its interior seating to feature a traditional beer hall style, with tall ceilings and bench seating. It has plenty of outdoor seating covered with a tent. It offers light snacks but a food truck or two are often parked there, and it features a host of pub games to keep you entertained.
